Stardew artisan or agriculturist

To clarify I want to use the statue of uncertainty to change from Artisan to Agriculturist in the spring so that my strawberries yield 6 harvests instead of 5. Even with speed-grow I won't be able to plant all strawberries on the first day so Agriculturist will be necessary. But once I got my extra harvest I obviosuly want to go back to Artisan.
